Keto Apple Crisp - What???

This recipe passed the picky family test . . .
First of all, let's deal with the brown sugar. How do we make that happen?
Put some (a cup or so) of monkfruit into a small blender. Drizzle a bit of molasses over top. Blend. You may have a few lumps but I learned from experience that it's easy to overblend and then you'll get more of a powder than granules. So don't overblend. You can squash out any lumps with a fork after.
Transfer into an airtight storage container. Ta da! Now you have brown sugar. Easy!
Tip: If you've ever used monkfruit before, you'll know that it's way sweeter than regular sugar. You'll use 1/3 or 1/2 the usual amount. Monkfruit does not raise your glycemic index and is keto friendly. Molasses will, but it's such a tiny amount in your whole batch and then you're only using just spoonful or so in your entire recipe so the amount of glucose coming from the molasses ends up being negligible.
Now the Apple Crisp part:
Topping: 1 1/2 cup chopped nuts - walnuts or pecans work great, preferably raw, not toasted.
1 cup almond flour
1/2 - 1 tbsp home made brown sugar
1 tsp cinnamon
3/4 cup butter
You can add a pinch of salt if you like. I use salted butter so that can be enough.
Mix till blended.
Adjust measurements as desired. To be honest, I didn't measure anything when I made this. I eyeballed everything. So these are approximate measurements anyway. Baking is an art, right?
Apple part:
Prepare chopped apples.
Mix in a tbsp or so of home made brown sugar and a tsp of cinnamon or pumpkin pie spice or whatever you like for kick. And then sprinkle in a tsp or so of psyllium husk to thicken if you don't like your crisp to get too juicy and watery. The psyllium really works well for this.
Tip: If you're not a raisin hater (I know many are) but add them in for additional sweetness if you choose. Just keep in mind, if you're really strict with your keto guidelines you may want to add sparingly if at all. If you're just going for low carb, you won't break the bank adding raisins.
Then you know the rest:
Place apples in a baking dish and add the topping over it. Bake at 350 F for 30 min or so. I used crab apples so my apple pieces were really small. It baked in no time. You may have to add time if you use bigger apple chunks to cook through. Or maybe you like it a little crunchy. Adjust accordingly.
